-thinks people tend to make too much out of brewing method! Heat water to below boiling, 180 or so, pour 8 oz over 1 teaspoon of tea, steep for 3-7 minutes depending on oxidation amount. From this starting point, you can brew any tea successfully the first time and decide whether you want stronger tea, in which you can add small amounts of extra leaves, or if you want more tannins, longer brewing time.Tea oils tend to be volatile so erring on the side of short brews to begin with is the way to start. Short of not destroying it with overly hot water, there is no "right" way to brew tea beyond learning what tastes good to you through experimentation. Sonata values natural herbal flavors that tend to be volatile over flavors created during curing, so trends towards shorter brew times at lower temperatures. Plenty of people would disagree, preferring to extract the complex chemistry created during curing with longer brew times and slightly hotter temperature. You should try both, see which you preferred, and then dial in your times, amounts, and temps until you find your camellia sinensis nirvana!-
