So, as someone who has their own chickens, the answer is that once you wash off the bloom from the egg, the inside of it is susceptible to bacteria. Eggshells are porous and eggs aren't fully shelf-stable, even with the bloom, for more than a month or two without refrigeration. I've had unwashed eggs grow fungus that was leftover from the chicken shit in the coop where they were laid.

No they do not. When you wash or refrigerate eggs you compromise the bloom and allow bacteria to enter the egg. Decomposition starts as soon as you wash the egg or as soon as the egg gets cold enough to shrink the bloom. Eggs are living things and need to be killed before they start to rot. Everything you know about eggs is wrong.

You know that in all first world countries (the US is not a first world country) you can buy unwashed eggs in cartons, right? They're fresher and last longer than washed eggs. You just have to wash them before you eat them like all of your produce.

In the United States our eggs are washed and sanitized shortly after being laid to remove containments. This removes the egg's natural protective coating which can make eggs more vulnerable to bacteria entering through the shell.

When this happens it's required to refrigerate to slow bacterial growth and keeps them safe.
