I don't believe science when it says I can't be a woman for example.

The medical technology capable of turning you into an actual woman, literally doesn't exist though.
As things stand now, you can only poorly mimic the hormonal state of being a woman and have your male body modified into an appearance of being female, while not actually turning you into one.

Unless we at some point manage to invent the technology that can change the code of your chromosomes and actively rebuild your body, perhaps by taking the X chromosome out of a semen sample from your father and somehow replace it with the Y chromosome he supplied when you were conceived, you could be turned into a woman.

I wouldn't have worded most of it like that, but I tend to agree and on the lying about their sex part, if the trans person has no issue admitting that their birth sex is the opposite of how they've decided to lead their life, I don't think they are lying.
